- Mash the banana in a bowl
- Add the 2 eggs and beat well to combine
- Heat a non-stick pan over medium heat and oil the pan with coconut oil
- Mix the batter and pour about 1/4 cup of batter per pancake The pancakes are easier to flip if you keep them small
- Make sure the pancakes are well cooked before flipping
- Cook the other side for a minute and enjoy immediately
- Top with your favourite toppings (pictured here with strawberries and shredded coconut)
